I'm an EMT-B Student, and I've been wanting to put together an adequate first aid kit to keep in my truck. Any tips on what to have and what not to have??

Unless an agency assigns it to you an AED is overkill. Also you will want to be careful giving meds to a stranger. You need to know what the Good Samaritan laws are in your area.A good start would be:
Tourniquet, ~5 pairs of gloves, a few 5x9 ABD pads, tape, smallest bottle of baby aspirin. Assuming you can't afford a defib or epipen, I'm having trouble thinking of anything else that would really make much of a difference. A BP cuff couldn't hurt - you could give a palped BP to first responders when they arrive, and it doubles as a second tourniquet.

Agreed.
About the only thing I have is extra gloves left in my pocket I throw in the car. What exactly do you plan to do off duty?
