One of the Medics that I was training with carried a dry erase marker with him. On the inside of most ambulances are smooth flat surfaces in which dry erase markers work very well (and come off very well too).
You'll get plenty of time reading whatever textbook the course uses. For me reading Dubin's EKG book, Pathophysiology Made Easy, and a paramedic drug book/cards were a great help before going to school. I'd also get a good A&P book.
